A horse on a tracing board for the degree: “Sublime Ecossais de Franville”. I think this means ‘sublime Scot from Franville’. There is a town called Franville right in the middle of the Peche national Park (somewhat straight North there is a place called “l’Aigle” by the way (‘the eagle’)). Otherwise I wouldn’t know what the word means.
The tracing board actually shows two horses:

Something is written above the horse at the bottom left:

Perhaps it is “l’Europe” (Europe) as the crocodile at the bottom right appears to say “l’Amerique” (America). The horse at the top right could stand for Asia and the lion for Africa.
The four animals are all numbered I and the description of the tracing board indeed seems to say that “I” refers to: “les 4 parties du monde”, the ‘four quarters of the world’.
Horse, by the way, in French is “cheval”, which makes an odd wordplay with “chevalier” or ‘knight’.
